Winemaker and viticulturist, Malie McGregor, and her team have been carefully maintaining the precious vineyards all year long and now, the highly anticipated time has come. The winemaking team are hard at work creating the elegant wines that Cavalli has become known for.
Harvest kicks off with the white varietals; Viognier, Verdelho, Chardonnay and lastly Chenin Blanc. The harvesting team sets their alarm clocks and heads out at dusk each morning, cutting the perfectly ripened grape bunches from each respective vineyard block.
With great care, Malie and her team transport the freshly cut bunches to the cellar – conscious of keeping the bunches cooled to ensure perfect sugars and fresh acidity in the finished product. Minimal intervention in the cellar is required, as the attention to detail in the vineyard throughout the year, has produced phenomenal quality grapes.
Experience and artistry now collide, as Malie and her team create a symphony from the humble grape.
