Cavalli Shiraz is bold, spicy, and fruit-driven. The heat of harissa mirrors the wine’s peppery spice, while the honey adds a touch of sweetness that lifts Shiraz’s dark fruit flavours. A quick glaze on the braai creates a sticky, smoky crust that’s irresistible.
Ingredients
Serves 4
- 12 lamb cutlets (French-trimmed for presentation)
- 2 tbsp harissa paste (adjust to spice preference)
- 1 tbsp honey
- 2 tbsp olive oil
- 2 garlic cloves, finely grated
- 1 tsp smoked paprika
- Sea salt & cracked black pepper
Method
- In a bowl, mix harissa, honey, olive oil, garlic, smoked paprika, salt, and pepper.
- Rub the mixture generously over the lamb cutlets and let marinate for 30 minutes.
- Braai over hot coals for 2–3 minutes per side (medium-rare) or longer if preferred.
- Brush with any remaining glaze in the last minute for extra caramelisation.
- Rest briefly before serving with grilled flatbreads, aubergines, or a yoghurt dip.
