We chat to our winemaker, Craig Barnard, about our premium range “Filly” 2019 Chenin Blanc
“Filly Chenin Blanc, now in its third vintage at Cavalli Estate, has really cemented itself as a force to be reckoned with within our portfolio of wines, as well as in the market.
Made from meticulously cared for fruit the wine undergoes barrel ageing for 9 months on its fermentation lees before being bottled. The lees is key to the wine’s evolution, it brings balance to the acidity, provides mouthfeel and allows the wine to maintain its freshness.
Making the wine is a real pleasure as the fruit is amazing and couple that with the different French barrels used to ferment the wine in – you really do see what an amazing vineyard we have at Cavalli Estate.
I am excited for the future of the wine, as the vineyard gets older we start to see varying layers of complexity coming through. Production has increased year on year which is a testament to all the hard work out in by the cellar and vineyard teams.”
